I hope you all are having a stellar day! Today I wanted to share a delicious yet low-calorie recipe that you need to try! I don’t do many recipe posts but I decided this one was to good not to share!
It is incredibly easy, high in protein, bursting with sweetness and flavor, and low calorie so you can still lose weight! in the picture, this is around 300 Calories which is a great start to the day if you are eating about 1500 calories and like to snack in between meals. We all know that calories in vs calories out is the best way to lose weight easily so these are an absolute must to include in your 1500 calorie meal plan!
Lets get started by talking about ingredients! (Linked down a bit in the post!)
- Kodiak cakes pancake mix (or any pancake mix you have or oat flour, cals may vary)
- PE science Vanilla protein powder (or any other vanilla whey protein)
- Vanilla cheesecake sugar-free pudding mix
- Lemon zest
So all you need are these ingredients for the base pancake. You can commit the zest but the pancakes will not taste very great with just the Kodiak cake mix! the sugar-free pudding mix makes the pancakes have more flavor while the whey protein powder will make it cook better without more flour or pancake mix (which is high in calories). You can also add an egg in this too for a more fluffy pancake but I decided to omit that. I add the blueberries on the side because sometimes if you put them in the batter, they can burn, which can affect how well they cook, you can add them on top of the pancake while on the pan. If you do this, let me know how it turns out!
How to Make the pancakes Lemony
Simple, you can add some lemon juice to the pancake mix before cooking, or you can add some lemon zest on top. For the plate shown, I decided to add Noosa lemon Greek yogurt to give it a more fancy creamy texture. I HIGHLY recommend doing this! Adding some lemon zest on top will also make it delish!

Skinny Lemon Blueberry Pancakes
- 20 g Kodiak Pancake Mix
- 22 g PE Science Vanilla Protein Powder
- 7 g Sugar Free Cheesecake Pudding Mix
- 100 ml Water (this can vary, look at instructions)
- 1/4 tsp Baking powder
- 1/4-1 tsp Lemon zest or Juice (Add as much zest as you would like)
- 60 g Blueberries
- 40 g Lemon Noosa Greek ogurt
- 1-2 TBS Miss Butterworths Sugar Free Syrup (Or any other syrup. Calories will vary)

in a medium to small size bowl, mix together protein powder, pudding mix, kodiak cake mix, and baking powder. Use a scale to measure ingredients. I will link one for you that I use.

Add in about 60-120ml of water depending on how thick or thin you like it. The thinner it is, the more pancakes you can make but the thicker it is, the thicker the pancake. Play around with what you like! I used about 100 ml of water which made 6 small pancakes.

Mix the batter, but be careful not to overmix as this can flatten the pancakes.

Make sure you have a nonstick skillet or a griddle (this is what I use personally and I love it!) heated up and sprayed with a lttle oil. heat untill cooked about 1ish minute on each side like normal pancakes. They may not bubble on top so don't use that as an indicator. Heating it on the griddle the pancakes were done in less than 5 minutes. add blueberries on top if you would like.

place pancakes on a plate and top with powdered peanut butter, sugar free syrup, n oosa lemon yogurt,more blueberries, and lemon zest. The peanut butter is optional but tastes so good! These are all on the image for the recipe 🙂

The calories in this include the yogurt, pancake mix, blueberries, sf pudding mix, sf syrup and protein powder. if you add more or less, keep this in mind!
